The most authentic Hunan restaurant in Guangzhou which serves familiar home made dishes which has nostalgic flavor, especially its house specialty; Steamed Fish Head with Chili Pepper, it definitely worth a try. It has nice environment, but there are always too many people, so you can't really avoid the noise.
