The Menlu (oven-roasted) duck served at Bianyifang is known for its crispiness and tenderness. Bianyifang offers many flavors of duck: ''green roasted duck'' (Shangdong style); ''crispy flower-flavor'' (Huaxiangsu); ''crispy vegetable-flavor'' (Shuxiangsu); and ''Romance of Three Kingdoms,'' a banquet of all three kinds of duck. Representative dishes from Bianyifang's menu include: Boiled Duck Liver with Salt (Xianshui Yagan), Duck Flippers with Mustard Sauce (Jiemo Yazhang), Braised Sea Cucumber with Scallion (Congshao Haishen), and Braised Crispy Crucian Carp (Suxiang Jiyu).
