If you like spicy, don't forget that Sichuan isn't the only game in town - Hunan chefs are pretty mean chili-slingers, and the ones at the Xiang Jun Lou know what they're about. The Hunan style uses less of the distinctive mouth-numbing Sichuan peppers and relies more on the bright red ones used by police in crowd control. Hunan also makes more use of smoked and cured meats.
